White Warehou Gilled & Gutted 1kg/Fresh
White Warehou is a beautiful fish to cook with, and has a good flavour, medium fat content and a melt in your mouth texture. It is suited to most cooking methods, and is also delicious when smoked.
A Premium New Zealand Species. Its excellent Sashimi grade flesh is firm, white in colour and high in fat.
White Warehou is managed by the Ministry of Primary Industries using the New Zealand Quota Management System. Regular stock asessments are conducted to estimate fishe stock size and numbers along with Scientific studies being used to enable future stock sizes to be estimated to determine catch limits.
Commonly found off south east of New Zealand and on the Campbell Plateau. Closely related to Silver Warehou but is found in deeper waters.
The flesh is uniformly greyish white and firm and the fish has no apparant scales or pits. Average weight is 1.3 - 7kg and average length is 40-60cm.
Preparation: Can be baked, curried, marinated, steamed, poached, smoked or fried.
Availability: Available year round while stocks last.
Shelf life: Best consumed on arrival or within 3 days from receiving product if defrosted.
Fish for your health: White fleshed fish is traditionally high in protein and low in fat. However, all fish provide an excellent source of Omega 3, an essential fatty acid which helps in lowering blood cholesterol and maintaining a healthy circulatory system.
Suggested wines: A fruity Chardonnay, will add an element of citrus and round out the flavour nicely. A medium-bodied Sauvignon Blanc will enhance the fish like a wedge of lemon and can offer good complementary flavours if you go with a herbacious variety.
