Spicy Tuna Roll
 
Using a spoon scrape the meat from the flesh left on the skin, around bones and scraps. This is the best way to get all usable meat from Tuna you would otherwise throw away. Scraping makes the meat rich and creamy, unlike mincing for chopping fine, but will do if you only have premium cut.
 
250g fresh Tuna
2 tblsp Kewpie Mayonaise
1 tblsp Siracha Chilli sauce
Bunch chopped coriander
½ lime, squeezed  
 
Mix all together check for taste balance, you might want more chilli.
