Swordfish with Caper, Gherkin & Chilli Butter Sauce
Ingredients (enough for 2 people)
- Fresh swordfish steaks
- Gherkin
- Capers
- 1 red chilli
- 1 green chilli
- Salt & pepper
- Dried chilli flakes
Steaks
Lightly oil the steaks with olive oil.
Grind some black pepper and sea salt on, then a sprinkle of dried chilli flakes.
Then grill or BBQ the steaks, approximately 2 minutes first side and 1 minute second side.
Sauce
Finely dice gherkin & capers.
Slice fresh red & green chilli’s (seeds in tack).
Melt a knob of unsalted butter and a splash of olive oil into a saucepan.
Add the chilli mixture and toss.
Add the gherkin & capers until butter melted and not browned
To serve
Plate the swordfish and drizzle the sauce over the top.
