Squid and Chourizo in Lemon and Coriander

Squid & chourizo recipe

Ingredients

500g Whole Squid (cleaned), or 500gm Squid Tubes (cut into pieces

1 pack (approx 300g) Fernando's Portuguese Chourizo (cut into 1cm rings)

100ml Lemon Juice

Half Cup of Coriander

1 clove of Garlic (finely sliced)

2 Tblsp Olive Oil

Salt and Pepper to taste

Method

Heat the frying pan on high heat and add the Olive Oil and Garlic.

Toss in the Chourizo.

Add the Squid

Season with Salt and Pepper to taste.

Stir together and fry for 1 minute.

Add Lemon Juice and Coriander.

Cover and cook for 2 minutes (Stirring occasionally)

Serves 4
