Local Pacific Oysters Served in ½ Shell with Marinated Cucumber & Lumpfish Caviar

Marinate Cucumber:

   1. Julienne cucumber through mandaline.
   2. Toss with rice wine vinegar, sea salt, fresh cracked pepper, lemon juice & lemon zest.
   3. Taste as you go to not over marinate & make it to acidic.

To plate, take oyster from shell place a little of the marinated cucumber in the shell, then place oyster on top & garnish with a little lumpfish caviar.
