Opening Oysters

Note: Various methods are used and especially method of popping the hinge and cutting the attached muscle from the back.
This method however is used by the commercial seafood companies and requires forced entry through the front lip of the oyster. Place Oyster between dish towel to get a firm grip and protect hands. It is hard and takes a few to get the knack, however there is nothing better and more fun than opening your own shellfish.
Method:
1. Place Oyster curve side down and front lip facing you.
2. Force Oyster knife into cup side of shell from the top lip breaking a little shell as you go.
3. Twist knife.
4. Force into base of shell cutting the bottom attached muscle.
5. Peel open – Oyster will still be attached to the flat shell.
6. Cut muscle and drop oyster back into original curved shell.
7. If dirty rinse Oyster in salty water and it’s ready to eat.
