Marlin Steak with Paua and Lemon Aioli
Ingredients:
4 x marlin steaks (approx 200gm each, cut thick)
3 tbsp soy sauce
3 tbsp sweet rice wine
2 tbsp olive oil
6 d'Urville abalone, or 3 yellow foot, or 1 black foot paua
3 cloves garlic crushed
1 tbsp butter
1 cup Mayonnaise (thick and creamy), 1 lemon, 3 tbsp olive oil
Potatoes, fresh greens, such as asparagus and beans
Method:
1. Mix soy, wine, and oil in a bowl. Poor over steaks and return to refrigerator for 10mins or longer if you have time.
2. Add mayo (brand “real mayonnaise”, which is creamy and very mild, alternatively make your own), juice of 1 lemon, 2 tbsp of Olive Oil. Mix all together by hand. Taste and adjust to suit. Refrigerate ready for serving.
3. Boil small baby potatoes until almost cooked (10-15mins). Drain and chop into quarters. Put back in pot with butter and seal each side. Turn down to very low and leave to keep warm.
4. Remove paua from shell, remove gut. Place in a plastic bag and bash each one until softened but not broken up. Slice very thinly with a sharp knife
5. Heat BBQ hot plate to high heat. Add marlin steaks, brown/seal each side for 1-2mins or longer if you prefer cooked through.
6. Add butter, paua and garlic to hot plate, cook for 1-2mins until starts to curl.
7. Steam some greens
8. To serve, lay a bed of potatoes and greens and stack one marlin steak on top. Top with a large spoonful of paua and dress with the aioli. Season with black pepper.
