Mahi mahi have a firm, flavoursome flesh that make excellent steaks for grilling or for the BBQ.
The meat is also suitable for curries, keeping its shape well and holding up to strong flavours
Commonly known as Dolphin Fish or Dorado (not to be confused with the mammal), the lifespan of Mahi Mahi is generally 3 to 4 years. They are fast swimmers, and average between 7 & 13 kg in size. It is popular for game fishing, particularly for it's beauty and chameleon effect when caught.
Mahi Mahi has a thin skin with firm, light pinkish flesh.
Preparation: It should be cooked until it just starts to flake. Care should be taken not to overcook Mahi Mahi. It is suitable fo most cooking methods. Lightly pan-frying works well (cook as per other NZ white fish).

Shelf life: Best consumed on arrival or within 3 days of receiving product if defrosted
Fish for your health: White fleshed fish is traditionally high in protein and low in fat. However, all fish, including Mahi Mahi provide an excellent source of Omega 3, which helps in lowering blood cholesterol and maintaining a healthy circulatory system.
Suggested wines: A dry, tangy white wine, with citrus notes, such a Riesling or Sauvignon Blanc, works well with Mahi Mahi. Alternatively Pinot Gris or Pinot Grigio is a crowd-pleasing choice for its easy drinkability on its own as well as its crisp, dry character.
