Groper has a very firm white flesh with few bones and is extremely versatile making it suitable for most cooking methods.
Groper is a fleshy fish and makes wonderful steaks, remaining moist with heavy flakes when cooked.
More commonly known as Hapuku here in New Zealand, they belong to the temperate Bass family. Groper or Hapuku are mainly caught near rocky areas in depths of up to 250 metres.

Preparation: Make groper the star of your menu and be careful to preserve its delicate flavour. This fleshy fish is extremely versatile - bake steam, pan fry, poach, smoke or sear on the BBQ.
Shelf life: Best consumed on arrival or within 3 days from receiving product.
Fish for your health: White fleshed fish such as Groper is traditionally high in protein and low in fat. However, all fish provide an excellent source of Omega 3, an essential fatty acid which helps in lowering blood cholesterol and maintaining a healthy circulatory system.
Suggested wines: An extremely food-friendly dry Riesling is a good match. If smoked, try a buttery, oaky Chardonnay. It will mirror the richness of the smoked fish and lend a slightly smoky taste. If you prefer red wine, a Pinot Noir makes a good choice, providing a combination of fruit and light spice, but also the velvety texture to handle a rich smoked fish.
