Groper Fillet with Preserved Lemon and Salsa Verde
Serves 4
Ingredients:
4 Groper fillets with skin on
8Tblsp *Salsa Verde
8Tblsp Preserved Lemon skin sliced
Watercress to garnish
Salt and pepper
Method:
Grille seasoned groper fillet for 8 minutes or until cooked, top with salsa verde and preserved lemon rind.
Serve with Cous Cous or similar grain dish.
*Salsa Verde
2 cloves garlic 6 anchovies
2T capers 2 handfuls parsley
1 gherkin 1 handful basil and mint
1T Dijon mustard 3T red wine vinegar
120ml olive oil Salt & pepper
Chop everything into a paste then add Dijon and olive oil in blender and season.
