Garlic & Sweet Chilli Prawns

Ingredients:
Vegetable oil for cooking
Prawn cutlets 1kg (PDT - peeled, headed & deveined, tail on)
2 fresh or dried chillies, finely diced
3 cloves garlic finely diced
3 tbs sweet chilli sauce

Method:

   1. Lightly rinse the prawns to wash off any excess shell etc, under running water, pat dry with paper towels.
   2. Mix together in a large bowl, prawns, garlic and chillies.
   3. In a wok or on a hot plate, heat a little oil and add the prawn mixture in batches. Cook for 4 minutes (turning half way). Once all cooked add the sweet chilli sauce, stir for a minute and let thicken.

Serve strait away, can garnish with chopped Italian parsley or sliced spring onions.
