Cloudy Bay Clams with Marlborough Sounds Blue Cod

Ingredients:

1kg fresh Skinned & Boned Blue Cod Fillets

2kg live mixed Cloudy Bay Clams (Tua Tua’s & Moonshell will be fine)

1 packet of Macadamia Chilli Kelp Sprinkles 2 Tblsp Garlic 3 Shallots (Thinly sliced)

3 Tblsp Sweet Chilli Sauce

A handful of fresh Chives (finely sliced)

A handful of Dill (roughly chopped)

2 Lemons

Oil for cooking

Pepper to taste

Ciabatta bread to serve

 Method:

1. Rinse clams.

2. Coat Cod fillets with the Macadamia sprinkles (Above amount is enough for 4 people, it is best to split and cook in batches of two.)

3. Heat large Wok, add Oil, Garlic, heat for 30 seconds.

4. Add 2 cod fillets and cook for 2mins, then turn

5. Add clams in around sides, shallots, place lid on and steam until just open (don’t overcook, best to have under cooked)

6. Add chilli sauce, lemon juice, half the herbs, a tbsp of left over sprinkles, toss, reduce heat and cook for a further 1 minute with the lid off.

7. To serve, place in bowls and dress with remaining herbs, pepper, and lightly toasted Ciabatta on the side
