Cajun Paddle Crab With Chorizo Rice

Cajun Paddle Crab

Ingredients:
4 Crab steamed and cut sets of legs
4 Tblsp Butter
1 Tblsp Cajun Spice
½ Tblsp Black Pepper
125ml White wine
250ml Shellfish Stock
Fresh Thyme
Lemon wedges

Method:
In hot pan add Butter, Pepper and Cajun spice. Deglaze with wine and stock add Thyme, bring to boil. Add Crab legs and heat through for 4-5mins. Place on moulded rice with a few spoons of liquid from pan.

Chorizo Rice

Ingredients:
2 Tblsp Butter
¼ C Chopped Onion
¼ C Chopped Celery
¼ C Chopped Red Pepper
¼ C Chopped Chorizo Sausage
1 C Long grain rice
1 ¾ C Chicken Stock
¼ tsp Tumeric

Method:
Sauté onion, chorizo, celery and red peppers in the butter. Add the rice and turmeric,  brown lightly coating all the grains with the butter. Add the stock and bring to boil, cover and put in oven for 12 mins then let stand for a further 10 mins.
