BBQ Sardines with Sauce Vierge

Serves 4 (Entrée)

Ingredients:
8 Sardines
½ C Olive Oil
1 lemon juiced and rind grated
1Tblsp Fresh basil chopped
1 Spring onion finely chopped
1 Tomato, peeled and deseeded
12 Olives, pitted and chopped
Salt/pepper

Method:
To make the Sauce “Vierge” combine, olive oil, lemon, spring onion, olives, salt pepper, basil and chopped tomato in sauce pan and warm gently.

Gut Sardines and cut fins off with scissors, BBQ on each side just a little and finish in oven for a further 8 mins or until cooked. Can try cooking completely on BBQ but Sardines can produce a lot of oil when cooked which creates a little too much flame.

Once cooked arrange on plate and cover with plenty of sauce vierge.
