Banana Prawns with Chimichurri Sauce

Serves 4
 
1 kg Frozen Banana Prawns
2 Cloves garlic
3 tblsp soya oil
Chimichurri sauce*
 
Peel and de-vein defrosted prawns, leave heads and tails on.
In a hot hot pan saute the prawns in oil with chopped garlic.
Just as they are cooked, toss through chimichurri sauce.
 
Serve with rice and favourite salad.
 
*Chimichurri Sauce
1/2 cup olive oil
2 tblsp fresh lemon juice
1/3 cup minced fresh parsley
1 clove garlic
2 minced shallots
1 teaspoon minced basil, thyme or oregano, or mixture
Salt and pepper to taste
 
Combine all ingredients and let set for at least 2 hours before serving.
