Also known as Blue-Barred Parrotfish, Yellow Scale Parrotfish or Bluechin Parrotfish, these whole fish are pure white in colour with a mild flavour.
One look at the mouth of the Parrotfish gives you a clue as to it's name - instead of a traditional tooth arrangement, their teeth are rounded, packed tight, and cemented together with bone to resemble a beak. This allows them to grind down on the coral that forms a significant amount of their diet.
The meat of the Parrotfish has a mild, sweet flavour and cooks with thick, firm, textured flakes. It takes on flavour well, and is popularly used in dishes with strong and spicy Asian flavours.
