Asian Tuna Soba Noodle Salad
Ingredients:
500gm Yellow Fin or Big Eye Tuna
3 tablespoons soy sauce
1 heaped teaspoon Pure NZ Wasabi
1 tablespoon sweet rice wine or sake
300gms Japanese Soba noodles (or similar)
50gms pickled ginger
50gms black olives
1 bunch light stalky greens (rocket or similar) trimmed
170gm baby tomatoes, halved
1/2 cucumber skin removed and peeled into strips
Dressing:
4 tablespoons soy sauce
2 tablespoon lime juice
4 teaspoons brown sugar
4 teaspoons sesame oil
Method:
1. Trim tuna into a block that can then be cut down into cubes and combine with soy, wasabi and sake. Allow tuna to marinate for 15mins in fridge.
2. Cook Soba noodles in boiling water for 4mins. Drain and rinse well with cold water.
3. Add Noodles to a large shallow salad bowl. Add greens, tomatoes, cucumber, olives.
4. Make dressing by combing all ingredients in a bowl, set aside.
5. Heat a fry pan over high heat, preferably non stick. Sear Tuna cubes for 10 seconds on two sides only.
6. Place tuna on salad and top with ginger and dressing.
