Tuna Tataki
Ingredients:
1 Loin Fresh Tuna – approx 1.5kg (Yellowfin, Bigeye and Albacore tuna are all suitable)
(Alternatively buy our prepared Tataki Block, and simply thaw, slice and serve with the Ponzu Sauce below)
Sesame Seeds
Vegetable Oil
Sesame Oil
Ponzu Sauce:
Mix 2 parts soy sauce with 1 part lemon juice and 1 part orange juice.
Garnish with shredded daikon or just eat.
Method:
1. Cut your Tuna block into a square shape. Approx 10 cms long and 3 cms high.
2. Sprinkle sesame seeds liberally onto all four sides, this gives it a little bit of crunch without changing the flavour significantly.
3. At medium-high, heat 1 part vegetable oil to ½ part pure sesame oil in a pan.
4. With a pair of tongs sear the tuna on four sides. Don't sear it for very long! Just enough so that about an eighth of an inch cooks through on each side. (If you like you can sear the two ends as well)
5. Immediately remove from the pan, and slice thinly, no more than a quarter of an inch slices.
6. Serve as soon as possible.
