Mahi Mahi or Wahoo Recipe (or other thick white fish)
Pre-heat oven to 210ºC bake.
Boil potatoes, and make a fine buttery mash.
- Cut fillet into serving pieces (180gm approx).
- Pan fry in some oil, brown and seal each side for 1-2 min in a hot pan.
- Season then put in oven for 5 to 10min (test at 5mins)
Make An Olive Tapanade
Roughly chop:
150gm Green Olives
150gm Black Olives
½ cup Dill
½ cup Coriander
Juice 1 Lemon
3 tablespoons Capers
Steam Baby Spinach.
Presentation: Serve by laying spinach, mash, fish on top, and dress with olive tapanade.
